So my first attempt at coconut ice squares went down very well with the folks at work! I was very impressed with the reactions so I will definitely be making them again. I just need slightly less icing sugar as it was pretty sweet!

Lemon, syrup, cheese, fruit, squirty cream… ?
My favourite is to have a couple of savouries first with cheese, chilli powder and basil… then I’ll have a couple of sweet with fruit, preferably raspberries and blueberries and a touch of squirty cream or syrup on the side!
